Celeriac is an increasingly popular ‘bulb celery’ which is planted on the flat similarly as for self -blanching celery. ‘Monarch’ produces flatter- round bulbs with solid white flesh. All celeriac demand plenty of water after transplanting and through the growing season. Also, importantly, as the bulbs swell then the lower leaf stalks will split which can be carefully picked off the developing bulb ( usually about mid July). As the bulb increases in size then it may be a weekly task to remove further leaf stalks, always from the base of the bulb upwards. On maturity most of the leaf stalks will have been removed, just leaving those at the top of the bulb untouched. Hand weed around the bulbs through the season. Bulbs are winter hardy, but best lifted and stored. Plant out at a minimum 40cm ( 16’’) between plants to allow for optimum bulb size. ‘Monarch’ matures approximately 120 days from transplanting. Celeriac is delicious grated raw in salads, added to soups and stews, or in a celeriac mash. Add a dash of lemon juice to minimise discolouration once the bulb is peeled.
