Shiitake Mushroom Log

Originating in Japan and China, Shiitake mushrooms (lentinula edodes) are an increasingly sought after ingredient in modern cuisine and are readily available in supermarkets. However virtually all of these mushrooms are mass produced indoors and taste very bland compared to those which are naturally grown outdoors.

Growing mushrooms just got even easier with our new mushroom logs. You don’t need to find and drill your own log - we will supply you with a log that has already been ‘inoculated’ with the shiitake mushroom mycelium or spawn.

Culinary note: Shiitake mushrooms are delicious fried in butter and a little garlic, then mixed into scrambled eggs.

Your mushroom log is delivered ready to be planted outdoors. Just choose a damp, sheltered spot in dappled shade. Damp spots under shrubs, in a large hedge or behind a shed are often good choices. Plant mushroom logs upright with 10 to 15cm (6 to 8") of the log below soil level and the letter at the top of the log. When growing shiitake mushrooms, treat logs as a moisture and shade-loving plant; water with the rest of your garden, keeping the soil moist around the log to prevent it from drying out. You should wet the log daily during dry spells. If the log sends out shoots or leaves, simply pinch them off. You can also plant your shiitake mushroom log in a container following the same instructions.

It can take 9 to 24 months for the spawn to colonise the log and 'fruit' (grow mushrooms). However with ideal weather and conditions, you may be able to harvest your first mushrooms in just 6 months. The main cropping seasons for this variety of shiitake mushroom are spring, summer and early autumn. After cropping it is possible to 'force' logs into producing extra crops by 'shocking' them in cold water. This causes the mushrooms to 'think' the season has changed and they will produce another flush of fruit. Shiitake mushrooms mature in 6 to 14 days. Pick them when they are 5-8cm (2-3") across. Use a sharp knife and cut off as close as possible to the log. Remember to handle the mushrooms gently as they bruise easily.

Caution: Some people are allergic to mushrooms or mushroom spores and others may become sensitised by high concentrations of spores. It is IMPORTANT that you positively identify all mushrooms before picking and eating.
